Like many, I have found inspiration in your honesty, having been subject to a perfect 'storm' myself of biology, a fondness for sweets, cultural pressures to overeat AND be thin, and self-image problems.

What I have found so refreshing is that you admit that people in the 'food industry' often have problems with overeating--before, it often seemed like there was a kind of 'party line' amongst food professionals that 'oh, I can eat anything, and I never want to eat anything but teeny, weeny portions of ultra-rich food--no dieting and no overeating issues for me, no sir!'--any admission that one had food issues might threaten some of the more indulgent aspects of the industry.

Do you think that eating disorders (binge eating, bulimia, anorexia) are more prevalent in the food industry than people are willing to admit in public?

Answer: 

I don't know for sure, and would hate to speculate or pretend to have knowledge I don't. I do know that some of my fellow professional eaters watch what they eat very, very carefully and aren't just heedless metabolic wonders. And I get the sense that their fascination with food was created in part by worry and fear over what it, and what their appetites, could do to them if not monitored carefully.
